Why can I hear the drums clearly but the bass disappears?

Likely simultaneous masking. Bass and kick drum frequently occupy overlapping low-frequency range, and without separation — through EQ, arrangement, or just how a system reproduces low end — the louder, more transient signal (usually the kick) tends to win by default, pushing the bass out of perceptual focus.

Does this only apply to recordings, or live shows too?

Both, and live sound is often worse for it — room acoustics and less precise gain control tend to increase masking rather than reduce it. The listen-in-passes method still works live, though obviously a listener can’t re-run a specific moment the way they can with a recording, so it functions more as ear training generally.

Is ‘texture’ just a vague word for ‘lots of guitars’?

No — it’s worth being more specific than that. Texture describes how layers relate to each other: doubled or harmonized, rhythmically unified or deliberately offset, dense or sparse at a given moment. Two mixes with the identical instrument count can have very different textures depending on those relationships.
